Fall is for Banana Bread

Come fall, I am a banana bread fiend.  Breakfast, lunch and dinner, and snack 1, 2 and 3.  I recently tried to make one with buckwheat and almond flour, since a friend at work is allergic to gluten.  I liked it, but, let's get real...it wasn't as good as when I make it with white flour.  The buckwheat flour taste overpowered the other flavors.  So today a made a loaf with whole wheat white flour, and buckwheat flour, since it has so many nutrients, vitamins, minerals, and yada yada.  (I had no idea buckwheat is a fruit seed that is related to rhubarb and sorrel!!)  It was amazing!  I have yet to find a gluten free recipe that I like, but until then....

THIS IS IT.  I loved this recipe adapted from Smitten Kitchen.

3 large ripe-to-over-ripe bananas
1 large egg
1/3 cup (80 ml) olive oil
1/3 cup (65 grams) brown sugar
1/4 cup (60 ml) maple syrup
1 teaspoon (5 ml) vanilla extract
1 teaspoon (5 grams) baking soda
1/4 teaspoon table salt
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
Pinch of ground cloves
1 cup (120 grams) white whole-wheat flour
1/2 cup (60 grams) buckwheat flour
1/8 teaspoon of xantham gum (for the buckwheat flour)
1/2 cup of walnuts
1/2-2/3 cup of semi sweet chocolate chips (depending on how chocolatey you want it)

Preheat the oven to 350°F and butter your 9x5 inch loaf pan.  Mash your bananas in a large bowl until they are creamy and smooth- small banana chunks are allowed.  Whisk in the egg, then the oil, brown sugar, maple syrup, and vanilla.  Add your baking soda, salt, cinnamon, nutmeg, and cloves and stir in; add in flour until just combined, then your walnuts and chocolate chips.
Pour mixture into your pan; I like to garnish the top with some more chocolate chips. Let it cook for about 40-50 minutes, or until a fork comes out clean.
Try not to eat the entire loaf right when it comes out, and watch out-- the chocolate chips WILL burn your mouth if you do so.
